A Real American Gyro: The Farmers' Market is Greek to Me
The Farmers’ Market store (on Old Highway 7 North) is a great place to find meats from Stan’s Country Store without having to drive to Panola County. Among the myriad meats from Stan’s that are available at the Farmers’ Market store is beef-and-lamb gyro meat. The prospect of being able to make real gyros got me amped, so I grabbed a basket and collected the rest of the fixings: Greek pitas, tzatziki sauce, fresh feta, spinach, and tomatoes, all within the store. Just cook the very thin meat in a pan on low heat for a few minutes. Heat the pita in the microwave about 20 seconds. The rest is even more self-explanatory than those obvious steps. I almost wished I weren’t out of Cavender’s seasoning and sriracha, but the meat is so delicious that I didn’t miss them—but they wouldn’t have hurt. I always add both when I’m at Volta.
